Healthy Pad Thai Style Veggie Stir Fry

Healthy Pad Thai Style Veggie Stir Fry


Sauce
1 tbsp soy sauce
2 tbsp sweet soy sauce
3 tbsp creamy peanut butter
1 tbsp sriracha (can add more/less depending on level of spice you want)
2 tbsp honey
3 tbsp apple cider vinegar or lime

Mix together until smooth.

Veggies
1/2 cup each of:
  • green beans
  • corn
  • broccoli
  • zucchini
  • (any other vegetable) 
3 cloves of thinly sliced garlic


In a nonstick pan, saute the garlic slices in 1 tbsp peanut oil and 2 tsp of olive oil. When fragrant and slightly golden, add the veggies. Cook for 5-8 min, adding 2-4 tbsp of water when needed so that veggies don't burn. When almost cooked, pour sauce on top. Cook additional 1-2 min and serve with rice or noodles.


Saute garlic and veggies in peanut and olive oil 

Add water as needed so veggies don't burn. Add sauce

Serve with brown rice (or noodles)

I decide to look at the internet a recipe of this food and I'm really lucky because I found your blog. I will this recipe immediately and I'm sure my son will like this very much.
