A variation of Spanish rice |
This isn't a standard Spanish rice but it follows most of the rules with bonus veggies and meat.
INGREDIENTS
- 1/2 of Hillshire Farms Smoked Sausage, quartered the sausage then sliced
- 1 large green bell pepper, chopped
- 1 medium white onion, diced
- 1 large red bell pepper, chopped
- 1 tbsp extra virgin olive oil
- 4 cloves of garlic, thinly sliced
- 2 medium tomatoes, diced
- 2 tsp paprika
- 2 tsp Penzey's sweet curry powder
- 1 tbsp hoison sauce
- 1 tbsp sweet soy sauce
- 1 tbsp rice vinegar
- 2 pinches of salt
- 3-4 cups cooked rice
* 15 min prep time, 15 min cook time

Olive oil and sausage |

Red and green bell peppers |

Two medium tomatoes |
|
White onions and garlic |
|
Hoisin sauce and sweet soy sauce |
|
On medium high heat, saute the sausage |
|
Cook until brown |
|
Add onions and garlic and cook until brown/ onions are slightly caramelized |
|
Add a pinch of salt |
|
Once onions are caramelized, add one tbsp of rice vinegar. Continue cooking 1 min |
|
Add green bell peppers and cook 1-2 minutes |
|
Add hoisin sauce and sweet soy sauce, cook another 1 minute |
|
Add paprika and sweet curry powder, cook 1 minute |
|
Add red bell peppers and a pinch of salt |
|
Put lid on and let steam for 1-2 minutes or until veggies are soft |
|
Remove lid to check and see if veggies are soft |
|
Add tomatoes, cook another 2 minutes |
|
Stir and allow the juices of tomato to create a sauce, cook 1 minute |
|
Add the pre-cooked rice |
|
Stir until rice is warm and enjoy! |
